**Kanda Lasun Masala** ( ) is a traditional Maharashtrian spice blend made mainly from **onion (kanda)**, **garlic (lasun)**, and a mix of roasted spices. Its famous for giving a deep, spicy, and slightly smoky flavour to curries, especially in Kolhapuri, Solapuri, and Vidarbha-style dishes. --- ### **Ingredients (Approx. 1 kg Masala)** * **Dry Red Chillies** (Byadgi for color + Guntur for heat) 250 g * **Dry coconut** (kopra) 100 g * **Garlic** 100 g (peeled) * **Onion** 200 g (thinly sliced) * **Coriander seeds** 100 g * **Cumin seeds** 50 g * **Sesame seeds** 50 g * **Cloves** 56 * **Cinnamon** 23 sticks * **Black pepper** 1 tsp * **Bay leaves** 23 * **Stone flower** (dagad phool) 23 pieces * **Oil** 100 ml (preferably groundnut oil) * **Salt** as needed --- ### **Method** 1. **Fry onion & garlic:** * Heat some oil, fry sliced onion on low flame till deep brown. * Fry garlic cloves till golden. * Cool completely. 2. **Dry roast spices separately:** * Chillies till aromatic (do not burn). * Coriander, cumin, sesame, coconut, cinnamon, cloves, pepper, bay leaves, and stone flower. 3. **Grind:** * First grind chillies into powder. * Then add fried onion, garlic, and roasted spices. * Add salt to taste and grind again to a fine powder. 4. **Store:** * Cool completely and store in an airtight jar. * Stays fresh for 34 months if stored in a dry place. --- **Uses:** * Perfect for **misal**, **bharli vangi**, **kolhapuri chicken/mutton**, **pithla**, and **bhaji**. * Can replace garam masala in spicy curries. --- If you want, I can also give you **the exact Solapuri-style Kanda Lasun Masala** thats more fiery and oil-rich than the Kolhapuri one.
