Urfa chilli pepper from Turkey are aromatic dark flakes with a fantastic sweet, slightly smoky flavour. Urfa flakes are made by salting and drying the chillies in the sun then wrapping them up at night so they sweat. The chillies are then crushed and rubbed with a little bit of oil to give a wonderful deep colour and delicious flavour.
